Ingredients

  • 2 medium tomatoes, pureed
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ cup heavy cream
  • 1 tbsp tomato paste
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

For the Bowl:

  • 1 cup cooked basmati rice or quinoa
  • ½ cup black beans (optional)
  • ½ cup sweet corn, cooked
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup pickled red onions
  • 1 small avocado, sliced
  • 1 lime, cut into wedges

Optional Toppings:

  • Crushed tortilla chips
  • Greek yogurt or sour cream
  • Cilantro chutney

Instructions

1. Make the Butter Paneer:

  1. Heat butter in a pan over medium heat. Add chopped onions, garlic, and ginger. Sauté until aromatic.
  2. Stir in the tomato puree and tomato paste. Cook until the mixture thickens and oil starts to separate.
  3. Add garam masala, red chili powder, turmeric, and salt. Mix well to combine.
