Ingredients
For the Butter Paneer:
- 200g paneer (Indian cottage cheese), cubed
- 2 tbsp butter
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 medium tomatoes, pureed
- 1 tsp garam masala
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ½ cup heavy cream
- 1 tbsp tomato paste
- Salt to taste
- Fresh cilantro, chopped (for garnish)
For the Bowl:
- 1 cup cooked basmati rice or quinoa
- ½ cup black beans (optional)
- ½ cup sweet corn, cooked
- ½ cup cucumber, diced
- ½ cup cherry tomatoes, halved
- ¼ cup pickled red onions
- 1 small avocado, sliced
- 1 lime, cut into wedges
Optional Toppings:
- Crushed tortilla chips
- Greek yogurt or sour cream
- Cilantro chutney
Instructions
1. Make the Butter Paneer:
- Heat butter in a pan over medium heat. Add chopped onions, garlic, and ginger. Sauté until aromatic.
- Stir in the tomato puree and tomato paste. Cook until the mixture thickens and oil starts to separate.
- Add garam masala, red chili powder, turmeric, and salt. Mix well to combine.
- Pour in the cream and ¼ cup of water. Let the sauce simmer for 5 minutes.
- Gently fold in the paneer cubes, ensuring they are evenly coated in the sauce. Simmer for another 2-3 minutes.
- Garnish with fresh cilantro and set aside.
2. Assemble the Bowl:
- Place a base of cooked basmati rice or quinoa in a serving bowl.
- Arrange the toppings in sections: butter paneer, black beans, sweet corn, cucumber, cherry tomatoes, pickled red onions, and avocado slices.
